Match the service style to the event

Orientation and welcome week want speed and a photo-friendly setup. Homecoming and tailgates want a longer window. Staff appreciation days want a tighter window and a clean, quiet setup near the building.

Plan the line, not just the plate count

Throughput matters more than menu length on campus. A short menu — burger, fries, lemonade — moves hundreds of students far faster than a wide one.

Handle billing, permits and paperwork early

Schools and universities usually need a W-9, a certificate of insurance and a purchase order or invoice against a department budget. Ask your procurement office what they need the day you pick a date.

Some campuses require a temporary vendor or health permit for outdoor service — the facilities office normally knows the process.

Give students a reason to show up

A branded truck, a lemonade bar and a posted menu at the entrance does more for turnout than an email. Departments that promote the truck a week ahead consistently see bigger crowds.
